The Minister for Health, Simon Harris TD, Minister of State for Health Promotion Catherine Byrne TD and Minister for Finance and for Public Expenditure and Reform, Paschal Donohoe TD, has welcomed the finding of the European Commission that the upcoming sugar-sweetened drinks tax does not constitute State aid.

This allows for the commencement of the Sugar-Sweetened Drinks Tax on 1st May 2018.

The tax on Sugar-Sweetened Drinks was announced as part of Budget 2017 with the launch of a public consultation which ran from Budget night until January 2017. Following on from that process, a series of technical consultations took place with officials from the Department of Finance and the Revenue Commissioners, together with representatives the soft drinks industry. These delectable little carrot cakes are ideal for every upcoming Easter celebration. Siúcra and Catherine Fulvio have created these adorable Mini Carrot Cakes filled with classic cream cheese frosting and studded with mini carrots!

Ingredients Makes 6 mini cakes

- 320g plain flour

- 11/4 tsp baking powder

- 1 tsp bicarbonate of soda

- 1 tsp ground cinnamon

- 1/4 tsp ground ginger

- 1/4 tsp nutmeg

- 200ml light olive oil

- 220g Siúcra Light Golden Brown Sugar

- 4 eggs

- 1 tsp vanilla extract

- 250g grated carrots

- 60g chopped walnuts

- 70g white chocolate drops

For the frosted pistachios

- 70g Siúcra Caster Sugar

- 60g shelled pistachios

- 100g butter, softened

- 350g Siúcra Icing Sugar

- 1 lemon, zest only

- 1 tsp vanilla bean paste

On Friday 4 May the Apprentice Chef Programme, which is supported by Flogas Ireland and Failte Ireland, will be featured on RTE's Nationwide ahead of the 2017/2018 final cook off at IT Tralee.

On Thursday 10 May 27 students from secondary schools across Munster and Leinster, including 4 students from 3 schools in Waterford, will don their chef whites and spend the morning in the college's professional kitchens to create their individually designed dishes.

Since October 2017 over 800 students have enjoyed a series of demonstrations and workshops as part of the programme which aims to promote the importance of healthy eating to enhance physical and mental wellbeing, encourage young people to consider a culinary career to help combat the current chef crisis in Ireland and contribute to the development of self confidence and self esteem.

A. Through hands-on excavation, archeologist and garbologist Bill Rathje found that a well-maintained, airtight, dry sanitary landfill acts more like a mummifier of trash than a decomposer, reports Edward Humes in his book "Garbology: Our Dirty Love Affair with Trash." Fifty-year-old newspaper was readable, steaks and hot dogs intact after decades, guacamole pasty and green after 25 years, onion peels and carrot tops recognizable after 20, and grass clippings still green after 15. The slowly decaying material is held in place by surrounding non-biodegradable plastic, and this "trash matrix" has the unintended benefit of sequestering to some extent toxic materials (paint, motor oil, insecticide and more) from the water table.
